dc.description	This article examines the state of the art on the issue of slave feeding in the three largest slave societies of the Americas: The United States, the Caribbean and Brazil. Through a comparative analysis, the paper shows the evolution of the lines of research and methodological approaches on the topic, paying special attention to the problems that historians face at working with disparate sources in pursuit of reconstructing the captives’ diet. Finally, we discuss the parameters to measure the appropriate level of nutrient intake based on the slaves’ physical constitution.	en-US
dc.description	El artículo examina el estado de la cuestión sobre el tema de la alimentación de los esclavos en las tres mayores sociedades esclavistas de las Américas: Estados Unidos, el Caribe y Brasil. Mediante un análisis comparativo, se presenta la evolución de las líneas de investigación y los enfoques metodológicos sobre el tema, poniendo especial atención a los problemas que los historiadores enfrentan al trabajar con fuentes dispares en pos de reconstruir la dieta de los cautivos. Finalmente, se discuten los parámetros para medir el nivel adecuado de ingesta de nutrientes en función de la constitución física de los esclavos.	es-ES
