Título :	Remesas : cocina regional y construcción de la identidad panamazónica en procesos de migración

Descripción :	En el presente trabajo analicé las prácticas que se desarrollan en la cocina regional y que se construyen por medio de la memoria gustativa de los panamazónicos que viven lejos de Leticia y la triple frontera, y cómo ello influye en su construcción y refuerzo identitario. La investigación parte desde una base teórica proporcionada por la antropología de la alimentación y contextos de migración en el sentido de cambio de lugar y en un intercambio cultural. La remesa y la cocina regional son el eje central de la investigación. Lo que se pretende demostrar es que, objetos materiales, con significados simbólicos, contribuyen para la construcción identitaria de jóvenes que se ven en la necesidad de dejar su tierra natal (para fines académicos o laborales) y adaptarse no solo a un estilo de vida distinto y a una culinaria diferente. La familia, por medio de las remesas, que funcionan como cordones umbilicales, acercan a sus hijos a ese territorio y contribuyen a que no olviden sus orígenes. Esas remesas están constituidas por alimentos y recetas típicas familiares, ingredientes que han permitido crear una regionalidad en la ciudad de Leticia. El objetivo es dar un panorama distinto a las ciudades y personas que viven en la región amazónica, con la intención de mostrar las prácticas y los saberes y cómo contribuyen a fenómenos sociales que enmarcan procesos individuales y colectivos. Finalmente, pretendo dar cuenta de la construcción de identidad teniendo en cuenta el contexto fronterizo. Con el objetivo de contribuir a una mejor comprensión de cómo las identidades se construyen a través del alimento (a nivel individual y nacional), considerando el papel la memoria y la creación de lazos afectivos y de reciprocidad en situaciones translocales. In the present work I analyzed the practices that are developed in the regional kitchen and that are constructed by means of the gustatory memory of the panamazónicos that live far from Leticia and the triple frontier, and how these influences in its construction and identity reinforcement. The research starts from a theoretical basis provided by the anthropology of food and migration contexts in the sense of change of place and a cultural exchange. The remittance and the regional cuisine are the central axis of the investigation. What is tried to demonstrate is that, material objects, with symbolic meanings, contribute to the identity construction of young people who need leaving their homeland (for academic or work purposes) and adapt not only to a different lifestyle but a different culinary. The family help to not forgetting their origins. These remittances are constituted by foods and typical family recipes, ingredients that have allowed to create a regionality in the city of Leticia. The intention is to give a different representation to the cities and people living in the Amazon region, with the intention of showing practices and knowledge and how they contribute to social phenomena that frame individual and collective processes. Finally, I intend to account for the construction of identity considering the frontier context. With the intention of contributing to a better understanding of how identities are constructed through food (at the individual and national levels), considering the role of memory and the creation of affective ties and reciprocity in translocal situations.
