Descripción :	La cocina es una tradición viva que se transmite entre generaciones. Son conocimientos, prácticas y técnicas cotidianas, que se recrean constantemente, de manera presencial, por la experiencia y mediante la comunicación oral. La cultura culinaria se ubica en la memoria colectiva, no obstante, está nutrida de saberes y prácticas que vienen del pasado, formando un legado que se alimenta de cambios con la adopción de nuevos ingredientes, técnicas y sabores. El conjunto de estos conceptos nos muestra cómo las tradiciones, la historia y la cultura de cada región constituyen un patrimonio intangible que se reproduce por medio de las generaciones, el cual es capaz de transmitir los conocimientos dentro de un pueblo. Es por esto por lo que se realizó una investigación en profundidad con las cocineras tradicionales, con el propósito de identificar cómo esas tradiciones gastronómicas repercuten o se relacionan con la identidad del municipio de Barichara. A partir de estas tradiciones gastronómicas se construyen prácticas de tipo social y cultural, además se establecen cadenas de intercambio de todo tipo. De allí se deriva el segundo componente de este proyecto. The basis of this project is to highlight the work and the preparations of the traditional cooks of this municipality, the inquiry into the perception that is generated in the tourist about the gastronomy of the municipality, in order that its legacy endure and be protected through its stories and recipes, looking for them to last in time
